Pascal Silman : a Passionate Michelin-starred challenger !

He made himself in the greatest French gastronomy institutions. The ones shining with their Michelin stars. One, two, even three stars. Pascal Silman collaborated with the most famous chefs in the most luxurious hotels during 17 beautiful years, taking the lead himself of his own impressive kitchens.

He created voluptuous flavours along with Alain Ducasse, 3 Michelin Stars, Michel Guérard at l’Eugénie les bains, three stars,  Roger Vergé at Moulin de Mougins, Jacques Maximin from Diamant Rose and his two stars and even Claude Patry from Chapon fin… A non exhaustive list !

17 years to perfect command of gastronomy. With a nutritional vocation for tastier, studied serving , XXL format, visually harmonious, calibrated according to countries and tastes.
He shaped them all, touched and cared for with love.
Ambitious and desiring to share his knowledge, Pascal Silman decided to enlarge his expertise 10 years ago with a new skill : restaurant architect.
He offered his service and collaborated in France and abroad to help investors building their gastronomic dream

Innovative, he also built his famous culinary calendar, respectful of life cycles : seasons, but not only : this calendar aligns on offer and not demand.

Pascal Silman and Dominique Nouvian, just like chameleons, adapt, from the creation, to the availability of products at their local regional producers to create adaptative and evolutive restaurant menus.
